The ultimate dipping sauce

What better way to spend your weekend mornings than making fluffy, gluten free pancakes? 😍

This simple banana pancake recipe is quick and only needs one bowl and pan (because who likes doing dishes?!).

What you'll need

Makes 6-8 medium to large pancakes

2 ripe bananas
1 egg
2 tsp vanilla paste/extract
1 cup your favourite GF flour (I did 1/2 cup brown rice and 1/2 potato starch to make them fluffy)
1 tsp baking powder
Pinch salt
1/4 – 1/3 cup milk
*Optional: 1/4 cup small choc chips

How to make them

Mash your bananas with a fork, then add egg and vanilla. Mix well.

Add your dry ingredients and mix well until there’s no lumps.

Slowly add your milk, mixing each time, until you reach a batter consistency. It should be spoonable, not pourable. On the thicker side is better to make them fluffy 👌

Heat your frying pan with a bit of butter or oil.

Spoon 1/4 cup mixture at a time and wait until the surface of the pancake is covered in small bubbles before flipping.

*Optional: to level these up, once you’ve spooned your mixture into the pan, poke in a few small choc chips and flatten down slightly with a spatula. As the pancake rises, they should sink in a bit further. Cook as normal
